Vegan Pad Thai

I'm a happy herbivore. It's recipes like the one I'm about to share that makes this no meat, no dairy lifestyle a breeze. If I were to pick one recipe to convince someone to go Vegan, it would be this one. This Vegan "Cheater Pad Thai" is low-fat, low-calorie and bursting with all the flavors us Thai food lovers go nuts over. While I can't claim this recipe as my own, I did tweak it a little bit and encourage you to try it both ways. I'd love to say Lindsay Nixon's entire "Happy Herbivore" cookbook is amazing but every time I want to try something new, I somehow find my way back to this one. Delish!
