I love S'mores. There's nothing better than gooey marshmallows, dark chocolate and crumbly graham crackers gettin' cozy over an open flame. Mmmm... so....in....love.
So when I found a Valentine's day card that shared my affection for S'mores and my boyfriend, I was way too excited. Like, can't go back to that Walgreens for awhile, stoked. But it's worth it, because this Valentine's Day, I get to be extra cute with a card and a matching gift. {Insert 'awwww' here}.
While on the hunt for a recipe to satisfy my creative appetite as well as my boyfriend's, I found a Vegan chocolate donut recipe that would do the job. How did I know it was the perfect recipe? Because the author used the term "best ever" and one too many exclamation points. I knew I could trust her, we bloggers don't joke about such serious things.
Her recipe with a few modifications is below and to her point, it is in fact, the best ever.
Donut Preparation
Preheat oven to 350 degrees. Stir together flour, sugar, cocoa powder, baking soda and salt.Add oil, vanilla and water and continue to stir untl smooth.
Pour into donut pan. < This part is tricky. Very very tricky. With no warning whatsoever on how skilled you have to be to make this happen. I highly recommend using scoop-shaped measuring cups for a smoother transfer of batter-to-pan action. Otherwise, you may have batter in your hair for days.
But then again, what do I know about keeping clean? Nothing matters when you're in the zone.
Bake for 10-15 minutes. Or until this beautiful thing happens.
Now that I have the chocolate down, I need to add in the marshmallow and graham crackers. I took my favorite Vegan buttercream frosting recipe and added in a few heaping spoonfuls of marshmallow fluff to get the job done. Go ahead and gush over the gooey-ness.
Chocolate Frosting Preparation
In a bowl using a hand mixer, mix together powdered sugar and butter until creamed well. Add milk, cocoa powder and vanilla and continue to mix until creamy and well combined.Once donuts are cool, dip them into the frosting to cover the tops.
Marshmallow Frosting Preparation
In a bowl using a hand mixer, mix together the shortening and butter until creamed well and fluffy Add the sugar and beat mix until smooth. Add in the vanilla and milk, beat mix until fluffy. Now, stir in your ricemellow creme.
Slather frosting on each donut with a spatula and top with graham cracker crumbs or sprinkles. I would say "dip the donuts into the frosting" like the rest of the blogs do, but that only left me with crumbs in my frosting and no frosting on my donut. (These little tidbits of information will save your life, folks. All is not as pretty as it seems on the interwebs).
I can't help but love you S'more and S'more my lovely little S'more creations, oh, and of course, boyfriend.
Happy Valentine's Day!
